This is a recipe that my mom makes but I have modified it a little. I love it and so does my family. It is great because #1 it tastes so good and #2 it makes a lot! We have leftovers for days! Here is what you need:
2lb ground turkey meat, drained (My mom uses hamburger. Whichever is fine.)
1 Large onion chopped 1 can each of corn, peas, green beans, carrots(sliced), potatoes(diced or cubed) and fire roasted diced tomatoes. Do NOT drain the cans of veggies. Add the juice as well.
1 large can of tomato juice
4 cups of beef broth
3/4 cup barley
3 bay leaves
Mrs Dash seasoning if you like
Cook meat and onion in large stock pot, drain.
Return to the stock pot and add all the veggies(do NOT drain them-add juice too), tomato juice and beef stock.
Now add the bay leaves and Mrs Dash.
Bring to a boil and then add the 3/4 cup of barley. Simmer for about 30 minutes.
